Q: Would this be good for a 6 year old or would it be too easy?

It should be just fine for a 6 yr. old.

Q: What puzzle glue would you recommend so it still glows-in-the-dark?

I don’t know for sure, but suggest an instant glue like “Miracle Glue”, maybe the Gorilla Glue that’s clear. My grandchildren don’t glue theirs, to my knowledge.

I don't think they would fit in a water bottle. They are a little bigger.
