How deep can this be submerged in water?

Hi there! It is suggested to submerge the Stirr up to its legs only. Using it to stir soups that cover its entire leg may not work best since this is the part that rotates. We hope this helps!

How long does it last for in one setting one hour two hours?

Would not recommend except for Broth. No noodles or veg... just broth

Does it start and stop intermittently?

Yes and it will stop and start as the liquid thickens.
