What is the widest pot you can use with this cooktop? Is 15.5” too wide?

My 13.5" brew kettle works fine on it.

I don't think so. There's no knob on the unit I have and it resets if you interrupt the power.

Is this a true 24 hour continuous induction cook top for bone broth making. does this stay on for 24 hours without shutting off?

I'll be honest, I have yet to use it due to it being 220 watt. Make sure you have the correct outlet for the plug!! You may have to change the cord to fit a standard 220 outlet. Good luck!
