Review: Great boning knife - Great blade shape for deboning. Purchased to process deer. I have deboned 5 deer, using almost exclusively this knife. I hit it with a home a few times in the process, it has maintained sharpness. The handle is a bit larger than Victorinox, but perfectly comfortable. The shape and texture offers an excellent grip with bare hands or with nitrile gloves. The point is very sharp, so not ideal for skinning, but that's not it's intended purpose. The tip allows precise cuts and reduces waste.

**Q: How flexible would you rate this 5” boning knife.   On a scale from 1 to 10. With 1 being very flexible/springy  and 10 being ridgid?**
A: I would  say an 8 or 9 . Great knife I have 4 of thelm  .

**Q: What is overall length of knife?**
A: I measured a 6 inch Dexter it was 11 inches overall a 5 inch Dexter is 10 inches .

**Q: Is it stainless steel? does it rust?**
A: stainless but will rust in saltwater

**Q: Do they come in different levels of flexibility or are they all the same? Victorinox does give you a choice.**
A: Not that I know of . They are flexible I do fish with thelm  often . Great for deboning  beef and pork too.

Great knife, super sharp. I've used it to gut and bone beef, bone / skin pork and it's fantastic. Super flexible which I find a huge advantage for what I use it for.
