Great stuff!
If you do some research on natural sweeteners with a zero glycemic index, you will see that Erythritol is one of the best. It is a sugar alcohol found in various fruits and vegetables like Xylitol. But unlike Xylitol, it is not dangerously toxic to dogs and does not have bloating, gaseous effects. If you don't need a sweetener without blood sugar effects, you can look at brown rice syrup or agave, since they have a very low effect on blood sugar. If you want no blood sugar effects at all, I'd recommend this, since it has a very nice taste (like sugar) with no aftertaste. Stevia is another option, but is very strong and has a less appealing taste. If you use even a bit too much, Stevia generally has a rather bitter aftertaste. This is not true of Erythritol. I would say the only downside is the cost and that it is only 70% as sweet as sugar. You can spike it with Stevia to make up the difference if you like Stevia. It doesn't take much to add to get it a lot sweeter. You should shake it up really well before using, though. Note: If you want to buy this particular item, I discovered that this company has not charged me extra shipping for more bags going to the same address. I would avoid EmeraldForest, though, because the Erythritol I got from them had a very strange, foul smell -- like mothballs -- and had a faint aftertaste that was the same. Their customer service was very nasty when I called to return it, in spite of their "100% satisfaction guarantee". I am sticking with Now Foods from now on. Also: It is a bit misleading that they call this particular item "powdered". Regular powdered sugar is pulverized and has cornstarch added to give it that silky feel, as well as calcium phosphate to improve its flowing ability. What they mean here, though, is that it is a much finer grain than their regular erythritol. It is still a grain, however. I buy it because it dissolves faster than the larger crystals, but both are good products.

Great value - great product!
Erythritol is a really great sweetener for someone like me. I have a massive sweet tooth but I know sugar is awful for you, and I also subscribe to a keto diet which means steering very clear from sugar. But I still want to enjoy some cookies or brownies or a nice sweetened coffee or tea some days (seriously, you can't beat an espresso with heavy cream with a teaspoon of this in it or a little bit in a cup of chai tea, it's heaven!). No aftertaste like Stevia or similar sugar replacements, it's ever so slightly less sweet than traditional sugar (but keto-ers like me are unlikely to notice as our tolerance for sweet gets dramatically reduced in a lot of cases), and it melts in warmth very easily so there's no worry of making a hot drink only to have a layer of sweetness coating the bottom of your mug because nothing melted and mixed properly. The 2.5lb bag is also an excellent value for the price and one of the best prices I've seen for this much Erythritol. I used to be Swerve but I'm pretty sure I'm converted to NOW Foods. I don't use it super often so this much will definitely last me a long time, but I love that I don't have to pay an absurd amount for it all either.

Love this product, but you may need to pulverize it for many uses.
I purchased this product based on many good reviews and I could not be more pleased. The "cooling effect" people describe CAN be avoided, but in my experience you must use a blender, or coffee grinder to grind down these crystals beforehand. The first time I used this product, I did not pulverize the crystals and made some mousse with it. The mousse, while having good flavor, did indeed have a "cooling effect" (The best I can describe this cooling effect, the feeling of a minty alcohol evaporating off your tongue), however I believe this cooling flavor is caused by the crushing of the crystals in your mouth. The way I avoided this "cooling effect" was to first grind down the crystals using my regular old blender (Be careful because this can cause the erythritol to become fine enough to float in the air, and look like smoke. I opened the blender outside so I didn't breath any of it in, but I wouldn't imagine it could really hurt as this is a natural product). After blending, the erythritol looks like very fine powdered sugar and is now ready to be used in baking, or cold dishes where the crystals become hard again. Used in hot dishes, one does not need to grind this down, as it will dissolve and not re-crystalize unless the dish is cooled again. i.e. coffee, or pasta sauce. The Good: Great value. great taste. very pure. nice resealable package. shelf stable as this will not absorb moisture. Naturally sweet. no chemicals or aftertaste (as long as you grind) The Bad: Would prefer this already powdered. Overall 4/5 stars: Very please with product, although I will look for a pre-powdered version of this product, preferably from "NOW Foods" as they have great quality products.

Great natural alternative to sugar!
This is a great natural alternative to sugar! Erythritol is natural occurring sugar alcohol. It can be found in small amounts in plant foods such as: grapes, melons, etc. I find it great, because it doesn't cause me stomach issues like other sugar-free sweeteners. It doesn't have an impact on blood sugar, or cause tooth decay either. I use it on its own in recipes, drinks, etc. I also mix it with stevia extract to make my own "Truvia" out of it, because it is less expensive to do so. I basically mix one cup of Now Foods Erythritol and 2 teaspoons Now Foods Better Stevia Extract on low a blender. A 2.5 lb. package erythritol will yeild 6 plus cups of "Truvia" for just over $20.00. I think it tastes better and I get more bang for my buck with my erythritol, since it is more expensive than sugar and only 70% as sweet. Here are the pros and cons from my standpoint: Pros: 1. Very low calorie - almost no calories. 2. Natural - it usually derived from fruit. 3. Less likely to cause gastro distress than other sugar substitutes. 4. Doesn't impact blood sugar. 5. Doesn't promote tooth decay. 6. Can be mixed with stevia to make "Truvia." 7. Erythritol on its own tastes very similar to sugar with no after taste. Cons: 1. More expensive than sugar. 2. 70% as sweet as sugar. 3. Doesn't dissolve as fast and as easily as sugar. 4. Has cooling sensation if eaten directly out of the bag. This doesn't matter if it is used in or with other foods. 5. Can in some cases cause GI distress, although I have never experienced this. I would definitely recommend this product to anyone who wants to decrease their sugar intake. I also recommend the Now Brand in general, because I have never been disappointed with any of the many products I have purchased from them.

Nature's Perfect Sweetener
Erythritol is a sugar alcohol that is found naturally in fruits and fermented foods. While you can derive Erythritol in a lot of ways, including chemical treatments, NOW Foods uses a purely natural method (and what you would actually think to be natural, not the term "natural" that let's companies get away with putting undesirables like maltodextrin and high fructose syrup in their foods) to derive its Erythritol. Specifically, NOW Foods Erythritol is derived from non-GMO corn via a lengthy fermentation, filtration, crystallization, ion exchange and concentration process. The final product contains no protein but the starting material is a corn derived isolate. Erythritol is derived from non-GMO corn via a lengthy fermentation, filtration, crystallization, ion exchange and concentration process (copied verbatim from an email I sent the company). What makes Erythritol the most desirable sugar alcohol is that it has a GI of 0 (About 40 calories a cup, compared to 800 calories a cup in conventional sugar) , has very little of the gastrointestinal effects seen in other sugar alcohols (your body absorbs most of the Erythritol before it hits the large intestine unlike the other sugar alcohols, so you would need to eat a very large quantity of Erythritol before your body starts feeling upset - 1 gram to 1 kg of body weight seems to be the daily limit), and it doesn't have the funky aftertaste associated with artificial sweeteners. So, is it too good to be true? Surely there must be some flaws with this product? Well, yes, Erythritol isn't perfect. It's about 70% as sweet as sugar (so you can't substitute 1:1 unless you don't mind a slightly less sweet final product), it has a cooling effect in your mouth (similar to the one you get from eating mint) - but this is greatly mitigated if you powder it in a spice grinder, and it can't be used to feed yeast (so you can't make root beer or pizza dough with it for example, but this really isn't a major concern since you can still use sugar, which will mostly be consumed by the yeast). The only major sticking point is the price. At 15 bucks for 2.5 lbs. it's not a cheap sweetener, and it's easily the most expensive sugar alcohol/sweetener out there. That being said, you get what you pay for as NOW Foods does not skimp out on the quality. So yeah, if you are diabetic or are looking for a way to cut out sugar from your diet without resorting to funky tasting sweeteners, Erythritol is your best option.

Not That Good for Cooking.
This is a decent sugar substitute however, I'm docking two stars because you can't use it to make a "sugar free" (reduction) sauce, I've found. I made my traditional Rum BBQ sauce that calls for a cup of sugar. I used a cup of this to replace it as I was looking to make a low carb - "sugar free" sauce. It tasted great while making it, but it did have a bit of that "cooling" effect (which I didn't really care for). My recipe requires reduction of the sauce which may have contributed to the problem I experienced. The problem was, when I finished the sauce, I set it in the fridge to take to the lake the following day. When I went to get it out of the fridge, and take it with us, it was a grainy, thick, clumpy mess! Upon reheating, it dissolved OK into the sauce again, but as it cooled (even off the heat on the table) it started to get granular again. This was very disappointing. That said, for other non - cooking methods, I think it's pretty good for the money. Just want to warn you if you wanted to cook with it. It *may* work for a sauce that doesn't require a reduction. At least, this was my experience, and I cook an awful lot! Hope this helps.

* * A Great Baking Blend * *Naturally Sweet & Naturally Loved * *
In my opinion Erythritol is the best of the Zero Glycemic Index Sweeteners and I really like the Now Foods brand.. I couldn’t take all the bloating and gas I got from most of the cakes, cookies and ice creams sold commercially with the artificial sweeteners they were adding.. They’re full of Xylitol, Sorbitol, etc, that work on the gastrointestinal tract. Sure they don’t have calories, but you pay for it in other ways. That tradeoff, isn’t good for your health. I only use two sweeteners now for everything and that’s pure Stevia & Erythritol. They both have their advantages and disadvantages, but I find with my diabetes they work the best for keeping me Healthy and my A1C’s in check Erythritol does cloud, when you first mix into opaque liquids, but clears up quickly. For most of my baking I mix Erythritol with Stevia. You have to kind of experiment, to find the blend you like. I think they actually sell a blend of that, but I’m sure it’s much cheaper to make your own and you can adjust it to how you like. I can’t tell you how to mix it, because there are different forms of Stevia (in much different strengths). Most people who have used Erythritol are familiar with the mint-like cooling effect on the tongue sometimes experienced. By mixing the Stevia & Erythritol for Drinks & Baking, I haven’t had that problem. I might add that I have Celiac disease, so all my baking is Gluten Free. It’s works great for gluten free cooking, so I can only imagine it would work OK for regular wheat flour too. I use Almond Flour, Rice Flours, Sunflower Seed Four, Garbanzo Bean Flour Etc. I use a bunch of different flours and the Now Foods Erythritol/Stevia blend I mix has suited me well.

Erythritol is quite simply the best non-sugar sweetener
First, the picky stuff. Erythritol can't be used as a 1:1 substitute for sugar as it's around 70% as sweet. So, if you're sweetening a drink, you'll probably want to use ~30% more to ensure you get the effect you want. Also, it doesn't dissolve that well into liquid at room temperature. If I'm adding it to an iced drink, I add a little hot water to the erythritol so the granules dissolve completely; THEN I add that solution to the drink. It's an extra step and it takes a little more time and effort. But! There is none of the bitterness or unpleasant aftertaste you get with so many other sweeteners. And it has no calories whatsoever. None! Over the years I stopped adding sugar to my tea and coffee, so I don't go through a lot of erythritol; but every so often it's nice to have (say) an iced coffee with a little extra shot of sweetness, and this hits the spot perfectly. Wonderful stuff. Next I'm going to try baking with it!
