This product is most likely silicone plumber grease, not petroleum jelly.  It can be purchased at any hardware store.  It is usually used to lubricate and seal moving rubber, vinyl, and nylon plumbing parts. how can I clean the lube after I use the keg?

Only use a little Lube so cleaning should not be an issue. A small amount goes a long way so you should not have much to to remove.I prefer to use the lube that comes in a tube. Its not any better but it is easier to work with.Cleanliness and Sanitation are very important to Getting good results and preventing an infection that can spoil a batch.Any god sanitation regimen will do.Wipe off any residue with a clean rag.I use white terry bar rags.I never use anything that could potentially leave micro scratches for unwanted microbes to hide that could infect your batch.Then carefully dissemble clean with PBW Powdered Brewery Wash and sanitize with 5-STAR Star-San and let air dry.Once dry put a light sheen of lube on the O-Rings to keep then from drying out loosely reassemble and store until next use.I always re-clean with Easy-Clean or 1-Step re-lube and assemble and sanitize my equipment just before I use it again.Remember you only need to put a light sheen on O-Rings.Also a little lube on the post threads helps prevent them from seizing just don't over lube or tighten them.I also keep a spray bottle of Star-San at the ready to keep my equipment sanitary as I work to prevent inadvertent contamination.

I need a food grade lubricant for my kitchen knives, some of which are 1095 steel and will rust.  Is this product good for that?

I'd recommend Camellia Oil, it doesn't gum up over time, it's safe, and if has a long history for the purpose you describe. Will this reduce co2 leaks on commercial kegs? i’m going through a 20lb co2 bottle about every 3 sixtels.

Keg lube will help keep o-rings pliable and seal better. Generally it is used more often when homebrewers are using ball lock kegs. I use commercial sanke kegs and I do put lube on the o-ring of the keg spear before installing it back in the keg. However no amount lube will fix your issue of using 20lbs of co2 for three kegs. You have a leak somewhere in you system that needs to be fixed.
