Q: What would be better the 120 or 220 glass stone for knives that have chipped edges? I have never used shapton glass stone.

Depends upon the amount of work you tend to do. Both stones can handle this type of work, the 120 will just do it more quickly - and so if you are doing a lot of this work I'd go with that. If it is something that you'll be doing only occasionally you could use the 220 easily.
