How do you make miso out of this?

For authentic miso soup bring to a boil 4 cups water. Add one packet (or 1 tsp) bonito soup mix, (available on Amazon) and return to boil. As the water is initially coming to a boil, in a small bowl place a good sized pinch of Fueru Wakame (dried seaweed, also available on Amazon) and just cover it with warm water. This will reconstitute the seaweed. Set this aside. After the soup mixture has come back to a boil, turn off the heat and add 2-3 tbsp, to taste, of the red miso paste. You may use a whisk to disolve it in the soup, or use a strainer and spoon inside the pan to disolve. If desired, cut tofu into 1 inch squares and add to soup. Add the seaweed and stir. Add green onions if desired. Enjoy. Go easy on the miso paste at first. You can always add more for a more robust flavor.

How long will this stay fresh in the refrigerator?

If you wrap an open package tight, it’ll last at least 3 months, and still be delicious after 6 months. An unopened package will last even longer, though it shouldn’t be neglected for that long. Enjoy!
