What are these made out of?

Salt, Calcium Lactate, Corn Starch, Rennet, Tricalcium Phosphate, Calcium Stearate. Rennet is made from the "milk in the stomach of an unweaned calf or goat." Generally the animal is killed in this process. The box also says "Partially produced with Genetic Engineering." Which in retrospect I am not too thrilled about.

What is the expiration date?
