Can you use one burner at a time (to save fuel, if you only need to heat one item), or do both burners heat up automatically?

Yes you can use one at a time. This is a nice back up stove. Does not heat stuff very fast and does not work well in the wind

Anyone have thoughts about this stove vs the classic coleman 2-burner stove? any reason why i shouldn't buy this one instead of the other?

The older style Colman is much heavier and has a windscreen for inclamate conditions. This one is more compact and lighter for a space minded car camper. I have both and the food and go seems to get used more on weekend trips and the older model on longer excursions.

what are the dimensions ?

It is approximately 12"x24" & 4" high. It works great. Taking it camping again next week; my 4th use of it.I recommend the carrying case.
