Can i buy replacement foam inserts?

Is it the foam that is supposed to fit 11 inch cases? It's either that or 16 inch here on amazon

How many microphones can it fit?

It depends on the size of the mics. But because this is a fairly small case, probably 2 small mics at best.

When you remove the perforated foam squares, is there a separate layer of foam at the bottom of the case for padding?

There are 2 layers of foam. The lid portion and the bottom portion that is perforated for customization. Purchase an exacto type razor knife maybe to precision cut the perforated foam in half or desired depth into bottom foam.

Can a Oculus quest 2 fit in these

I would say that the Oculus is too thick for the case to really protect it.
