Are these shinny or matte/satin?

the handles are matte/ satin. And they hold up very well. I got them because I lost a few pieces of a set I got 20 years ago. The only way I know the difference is the name is on the blade of the new knives

What is the better to get 18/0 or 18/10 Stainless ?

The 18/10 will give you a shinier appearance. Durability and rust are about equal in both 18/0 and 18/10. Hope this helps.
