Question 1

Will it reach 2 eggs in a small bowl?  Will the elevation keep it from doing small jobs like this like other egg beaters do with elevation devices?

I've had no problem beating 2 eggs in a cereal bowl.  It beats them in a shallow bowl but I like to use them in a little deeper bowlbecause it reduces spillage because of the shallow depth.  You get a lot of beating speed with very little effort out of this beater.I would not be without one of the OXO egg beaters.

Are there any advantages to this over an immersion blender?  Also, would this work to mix the wet & dry ingredients in a quick bread?

The nature of quick bread dough is to become tough with too much movement of the batter when combining the wet and dry ingredients. The best method for muffin or quick bread batter is to gently fold the wet and dry ingredients together. If you put any muscle into it, you're going to develop the gluten and produce tough rather than soft quick breads, and muffins and loaves will have a conical peak to the top which is a dead giveaway that you're a novice baker. The best advantage these manual egg beaters have over immersion blenders is the incorporation of air into the mixture. It is ideal when you want to mix a viscous liquid like whole eggs or heavy cream. It incorporated air for fluffy egg whites and clouds of whipped cream. An immersion blender's very small blades are designed to not greatly disturb the surface of the liquid you're blending. This reduces splashing considerably.

will this really make whipped cream?

I haven't personally tried making whipped cream with this, but I remember my mom making whipped cream with the great old-time egg beater she had. Basically, it just takes perseverance!

Yes it does.  I make alot of puddings as well and they are so much lighter now and more like a mousse.
