I have only used this for baking. I do not get the feeling that it is for browning meat. Just try a little oil in the pan andif you like, flour the meat and it will brown up. You can also brown without the flour.

Is this product made with shortening as well as flour?

The ingredients: soybean oil, propellant (isobutane, propane), hydroxylateo soy lecithin, soy lecithin, enriched wheat flour, silicon dioxide, TBHQ.

Does it gunk up non stick bake ware over time?

No? I just wash the bake ware as usual, and it's fine. I use Baker's Joy all the time with great results.
