How wide is the grove in which to slide boards? Everything I've seen online only says you can use "dimensional lumber fence boards"? Is that 5/8"? 1"?

Professionals (NOT home centers) use "Dimensional" to mean standard saw mill dimensions. Standard saw mill dimensions are stated as "nominal" sizes, which end up having smaller actual dimensions. In the building trades... DIMENSIONAL/NOMINAL = Thick" x Wide" x Long' such as 1 x 6 x 8, which is ACTUALLY 3/4" x 5-1/2" x Length' FENCE BOARDS ("pickets") = Rougher, Lighter, Standard lengths, such as 1 x 6 x 8 which is ACTUALLY 7/8" x 5-1/2" x 4/6/8' Length In other words, you need to know if you are talking about FENCE BOARDS or DIMENSIONAL LUMBER. When you see "DECKING" there are also some differences. Skip the big box and visit a local LUMBER YARD to learn more.

Can this be cut to make custom size adjustments? Also, can the inserted boards be used horizontally?

I did drill new holes on one end to make the gate 2 inches wider. You could cut it down to make it narrower. It only requires drilling two holes on the top and bottom rails. I did a horizontal gate. It is very difficult to do and takes two people to assemble. Getting the last end rail on is not fun... But it is worth it and gives the patio a very modern professional look.
