How loud are the buttons and joystick? i bought a set of happ-style buttons from eg starts and the clicking oud it is so loud that it distracting.

I would say the sound is about what you would expect. I installed a set on a cabinet, and took it to work for a couple of days(car dealership). I had people in and out all day playing with it. I'm in a cubicle, and only the guy right beside me, even knew it was being played. So, I would say definitely not distracting.

Can the buttons be mapped to keyboard key both single key like escape and alt+some combination?

I put these in an arcade1up machine with a raspberry pi setup. I used a keyboard to I initially setup the controllers to street fighter settings.

How do the buttons come apart to label them? Is there a weblink or video tutorial?

They just unscrew. When you have them in hand, it will be self explanatory.

Is there a way to hook an outside momentary switch to one of the ports For the buttons?

I guess you could, since all connections are independent.
