This has been commonly added to cocoa powder to balance out the acidity and bring out the rich chocolatey aromas. **Q: So is this a Dutch Processed cocoa or an unprocessed cocoa powder?** A: I use it at a hot cocoa (hot chocolate) mix, it is processed.
