I make half a package at a time, and put the other half in a screw-top jar - using lactaid-free half and half, I end up with two tennis ball sized dumplings. I make them toasting one slice of Trader Joe's buttermilk bread, cut into almost-dice-sized cubes - if you boiled a dumpling in water (with a little salt) or broth, by the time the inside was cooked all the way through, the outside would be falling off, so you form a nearly flat dumpling, place half a dozen toasted bread cubes in the center, and then fold, forming a sphere, first adding a little no-salt onion powder or seasoning you would use for stuffing to one dumpling and leaving it out of the other.
