Can you use it for cake batter - sponge?

Yes. Makes amazing rainbow cakes, if you have thin tins. Fun to match the icing to the colour of the inner as you go. Used for a raspberry vanilla layer cake recently with layers of cream and pink. Used raspberry essence and it was amazing!

Whenever I use this it never goes a dark colour? Why?

I have used their Aztec blue for my macarons and the colour was pretty dark. Although, the colour faded a little after cooking. Maybe if I added a little more dye, the colour wouldnt fade?

Are these suitable for adding to melted chocolate?late

Don’t think they’d colour milk or dark chocolate but they’d colour white chocolate.

Can I colour marzipan with these?

Haven’t tried, it should work although will depend on depth of colour required and initial colour of marzipan. I would try with a small amount of marzipan and see what happens. You might just end up with a deeper coloured marzipan rather than ivory.
