Has anyone else had trouble with replacement filters clogging immediately?

Never clogged for me - 5 years.

Why do I need 5 filters when original unit was 3 ?

This is a years worth of filters. During that time the carbon block and sediment filter will need to be replaced at the six month period. The hollow membrane filter is good for an entire year. That’s why there are five filters in this kit.
