I’m quite new to the fermentation game, but after being stuck on antibiotics to clear cellulitis this summer, my gut flora took a serious hit and I needed to sort things out. Now, I could have gone the probiotics route and taken some capsules with mysterious contents, hoping for the best, or I could have a go at doing things naturally. After all, I would rather look at something that could be incorporated on the regular and enjoyed than downing yet more pills. And so it was that I started first with sauerkraut and then with kimchi. I bought a couple of fermentation jars from here, and then discovered that actually, if I was going to make authentic kimchi, I was going to need something airtight that wouldn’t leak the smell through my fridge. I bought this because it would fit in our fridge and was an authentic Korean item. I was a little worried at the size because my recipe called for 4 heads of Chinese leaf and I thought they would never fit. I was so very wrong: by the time they had been brined down and properly daubed with paste, they fit the container perfectly. To the brim. I have been so impressed. It may look unassuming, but it really does what it says. The seal is perfect and you wouldn’t know I had some quite pungent kimchi in the fridge if I didn’t tell you. It’s incredibly easy to clean - just warm soapy water does the job, with no need even for the dishwasher. And since I bought it for a third of the usual price because it had damaged packaging, I feel like I got an extraordinary deal on it. I would also note that now I have used it, I would cheerfully pay full price for it in future because it’s worth it. So yes. This is the real deal and I am hugely impressed. Perfect kimchi, no smell, and fits neatly in the fridge, this is a new kitchen favourite.

Seems well made. Looks like it will last a long time.
