Good product; use regularly
I've used this potato flour for a couple years now, and it is always reliable; performs as potato flour should in recipes. Authentic is a great brand. I also feel it's priced fairly.

The bag is very small-will look for a bigger one next time. Not enough for a big family

I wish I had known what this is before I bought it.
Potato flour is very hard to find in stores. I knew from reading about gluten-free cooking that potato flour and potato starch are not the same thing and can't be substituted for one another, so I bought this. It turns out that this is the same thing as instant mashed potatoes, but in a very fine grind. This is massively over-priced fro what it is. I now tell my friends who are having to cook gluten-free that if they want potato flour, they should buy instant and pulverize it in their blenders, then sift through a very fine sieve. There is simply no reason to purchase "potato flour." In baking, it absorbs water quickly and helps give dough body, but it adds a distinct potato flavor and a gummy texture. Cooks who are new to gluten-free baking will want to try a variety of flours to see what they like, but this is not a cost effective way to try this kind of flour.

This is listes as a 1.25 lb bag. I received a 1 lb. Bag instead and charged the same price.
