Could you tell me what is the difference between the Microplane professional series graters and the gourmet series graters? Thank you.

I believe the only difference is that the gourmet series has a rubber grip handle and the professional series has a metal handle. Both are otherwise all metal as opposed to the Home series which has a plastic framing that, in my experience, breaks very easily. Both professional and gourmet can use the same food guard and are therefore the same size.

I have this product but how do I take it off the grader without wounding my fingers, because it won't slide down the handle; the handle is to thick???

You can take it off by prising/pushing the "clamps" on one side (either side) with your fingers quite safely - hard to describe but once you get the hang of it, very easy to do. Also the best way to get it on again - clip one side and then press down on the other side till it clips over the edge.

Does the metal framing go ALL the way through the handle, or is it simply stuck part of the way into the plastic handle?

It doesn't go all the way through the handle because there is a hole in the end of the handle for hanging, however the metal frame seems very well bonded into the plastic handle.

Are the gratings curved/round/semi circular with this model. I have one that does ribbons. Looking for a grate for hash browns. This the one?

You won't be disappointed. The workmanship and materials are first rate. Easy to use, easy to clean. The grated cheese is finely grated. I've used it primarily for parmesan and aged cheddar. I've also zested citrus and it works well there too.
