Would this work well with a Wusthof 8" Classic chef knife?

yes.  I have sharpened as many as 100 knives a day using hand - not powered equipment.  and I do not freehand sharpen.  the precise knife edge of the Lansky or the Edge Pro sharpeners will blow away any free hand edge.  you can sharpen up to a 10 inch knife with the lansky without moving the clamp.  I can tell you as a professional the Lansky is the best of the clamp sharpeners.  there are however three errors in the lansky directions.  1.  always sharpen dry.  NEVER use oil on sharpening stones.  the edge will be sharper and the edge will last longer if you sharpen dry.  America is the only nation on earth that pushes oil sharpening.  2.  man made stones are better than diamond stones.  man made stones have the same cutting power from top to bottom.  diamond grit plates do not maintain their cutting power.  3.  I flatten and clean the Lansky stones after every 5 knives.  flatten the stones on sand rubbed on a patio block or thick glass.  flat and clean they will sharpen  until the stone wears down to the plastic holder!

Can someone please tell me the coarseness of the stones? I.e. medium stone, fine stone etc.

This set has 5 different stones.  The extra course stone is LS70, course stone is LS120, medium stone is LS280, fine stone is LS600, ultra fine is LS1000.  Hope this helps!

Which is the better system the stone or the diamond and is the diamond worth the xtra cost

I would not listen to the guy who says to skip this product. I have many handmade knives, several of them fiddlebacks. I use this System for my outdoor knives. I use the Japanese whet stones for my kitchen knives. If you’re someone that actually USES your outdoor knives, the difference between this and Japanese whet stones isn’t worth the effort. If you keep them in a care and never use them.... sure.

Why does this say made in usa on amazon but made in china on the packaging?

Made in China. I contacted Customer Service at Lansky and the reply I received stated 50% of their product is made in China. The description on the product page states ‘Made in USA’. Deceptive advertising and the product I received is poorly machined junk.
