Can this be used on a wall, lets say in a kitchen to stop grease buildup on a wall

I don't think it would be suitable for that application. This is a spray-on dry lubricant. I don't think you could wipe grease off of it. It's also not something I would want around food prep. According to the warnings on the can it's somewhat toxic.

Does is work well on door hinges without making a mess?

You would have to take the hinges off and spray them including the pin, but I don’t recommend doing that. Just use a good oil such as 3-1.
